Each month at Filmore & Union we choose a seasonal fruit or vegetable to feature in our salads, juices and smoothies and this month our focus is on strawberries.

Strawberries have endless health benefits including being packed with vitamin C which boosts immunity, fights bad cholesterol, reduces inflammation and regulates blood pressure.

Vitamin C also promotes eye health and is vital to the production of collagen for younger looking skin. What’s not to love?

To make the most of strawberry’s health boosting properties, make up a batch of our summer strawberry iced lollies – perfect for keeping the kids quiet (for a little while at least) and also a delicious treat for busy parents too.

These beauties will keep you cool when the sun’s out and are great fun to make with all the family. They’re also completely free from refined sugar AND you get a delicious and healthy snack at the end!

It’s a super simple recipe that’s packed with antioxidants, healing goodness and energy-boosting vitamins, plus it’s rich in beneficial fats for metabolic balance.

It’s so versatile, you could even try experimenting with other fruits – just make sure you keep the coconut milk and water content the same.

INGREDIENTS

This recipe makes 6 lollies.

  • 2 bananas (the riper the better!)

  • 640g strawberries

  • 6 tbsp coconut milk

  • 4 tbsp water

 

METHOD

  1. Peel the bananas, wash and slice the strawberries and put everything into a blender.

  2. Pulse until smooth, then pour the mixture into ice-lolly moulds.

  3. Freeze for at least 5 hours, then enjoy!Summer is just around the corner and we’ve been trying out this super healthy recipe for a refreshingly chilled dessert with the goodness of banana and watercress.
