Blackberry coulis

There is nothing more satisfying than cooking and eating the fruit you have either grown or picked. The hedgerows are full of blackberries and make a nice change to strawberries and raspberries. Our traditional family favourite is apple and blackberry crumble or for something a little different we love a blackberry coulis which can be added to lots of dishes to make a special dessert.

Blackberry Coulis

200g Blackberries
40g Caster Sugar
½ tsp vanilla extract.

Place the berries and sugar in a pan along with 40ml of cold water. Bring to the boil and simmer gently for about 20 minutes, add the vanilla extract and stir well.

Leave to cool and then blitz with a hand blender, you can either leave the seeds in or sieve for a smoother finish.  

This simple sauce can be used over ice cream, chocolate mousse or a rich chocolate tart to add another dimension to a dessert.
