If you are only going to make one recipe this week, make this one. If you are a coffee lover don’t wait make it straight away! I am one of those coffee lovers and this is a gorgeous way to enjoy it, especially in the summer months. Serve it after a girl’s lunch with a dollop of cream or serve after dinner with ice cream. It tastes amazing, it’s a thing of beauty and its simple to make!
Coffee Granita
500g Strong fresh coffee (Expresso strength)
125g sugar
To serve
Options: Whipped cream or Ice cream and if you are feeling really decadent serve with a shot of Tia Maria (or any favourite liquor) and top with cream!
Method
Make your coffee as usual either in a cafetiere or in your coffee machine, if you are lucky enough to own one.
Stir in the sugar until it has dissolved and chill in the fridge
Pour the cooled mixture into a large flat freezer proof dish and place in the freezer for about 4-6 hours.
Check on the mixture about every 30-45 minutes and scrape the solids into the liquid with a fork. Repeat every 30-45minutes until it is all crystallised, then freeze until you are ready to serve.
Spoon into glasses and serve with a dollop of cream or ice cream and serve immediately.
We’ve served it in a shot glass with a dollop of whipped cream and grated chocolate.
