Paella is a great one pot supper dish which can be adapted to suit everyone’s tastes and the beauty of Paella, unlike Risotto, is that you don’t have to keep stirring it!
You can keep it simple like I have done or you can pimp it up using different vegetables, spicy chorizo, prawns, mussels, clams or any other fish you and your family enjoy!
Family Friendly Paella – serves 4
1 tbsp olive oil
4 boneless chicken thighs or 2 breasts, cut into chunks
2 tbsp chopped chorizo, mild or spicy depending on your preference
1 red pepper, deseeded and chopped
1 red onion finely chopped
2 cloves garlic crushed
2 tsp smoked paprika
300g paella rice
A pinch of saffron strands
1.2 litres fresh or low salt chicken stock
A small piece of broccoli cut into small florets
A handful of fine beans cut in half
Options
Use courgettes, broad beans, carrots or peas instead of the broccoli and fine beans, adapt to suit your families’ tastes.
1. Heat the oil in a large frying pan, add the chicken, chorizo and garlic and fry for about 5 minutes, stirring regularly.
2. Add the pepper and onion and soften for a couple of minutes.
3. Add the rice, paprika and saffron and stir so the rice starts to take on all the lovely flavours.
4. Pour the stock over, bring to the boil and then reduce to a simmer for 10 minutes.
5. Add the remaining vegetables and continue to simmer for another 10 minutes.
6. Give it a good stir to check the rice hasn’t stuck to the bottom of the pan and serve.
