These are very decadent and a real treat, they make a great ending to a dinner party, a thoughtful gift to a friend or just as a gorgeous treat to yourself! The key is a good quality chocolate as this is the heart of the truffle.
Gin and Tonic Truffles
200g good quality Dark Chocolate
2 tbsp Double Cream
2/3 tbsp Gin (according to taste)
1 tbsp Tonic
Juice of ½ a Lime and Zest of ½ a Lime
50g Butter – melted
100g White Chocolate
20g Dark Chocolate and ½ a Lime Zest for decoration
Melt the 200g of dark chocolate and cream together, add the gin, tonic, lime juice, zest of ½ a lime and melted butter.
Refrigerate the mixture for 3 hours then scoop out and roll into balls.
Place on a greaseproof paper lined tray and freeze for 30 minutes,
Melt the white chocolate and dip the balls in to coat them. You can use two forks to dip the truffles into the liquid chocolate.
Place back on the lined tray and sprinkle with the other zest of ½ a lime, refrigerate for 30 minutes.
Melt the remaining 20g of dark chocolate and drizzle off the back of a spoon going backwards and forwards over the tray of chocolates and leave to set in the fridge for 30 mins.
