As the nights draw in and the evenings get darker earlier its time for cracking out the loungewear (see post later in the week) and indulging in a mug muffin.
If you are not aware of mug muffins you are probably going to curse us form this day forward as these little beauties are little, hot, sweet convenience foods that can become addictive. However it is the season for bulking up to keep warm so here are our favourite heavily tested recipes.
2 tbsp self raising flour
3 tbsp caster sugar
3 tbsp cocoa powder
3 tbsp melted butter
1 tsp vanilla essence
1tbsp milk
1 egg
A few chocolate chips
Combine the flour, sugar and cocoa in your mug. Stir in the melted butter. Beat the egg, vanilla and milk into the mixture until smooth. add chocolate chips and stir. Microwave of full power for 2mins 30secs or until risen and spongey.

1/4 cup + 2 tablespoons all-purpose flour
2 tablespoons sugar
1/4 teaspoon baking powder
1/4 teaspoon cinnamon
1/4 cup milk, at room temperature
2 tablespoons salted butter, melted and cooled
1/2 teaspoon pure vanilla extract
For layering/topping:
1 tablespoon sugar
1/4 teaspoon cinnamon
Directions
In a small bowl, whisk together flour, sugar, baking powder, and cinnamon until thoroughly, completely combined, with no streaks of any ingredients remaining. Blend in milk, butter, and vanilla until batter is smooth. Into a 14-ounce (or larger) microwave-safe mug with straight sides, scoop a big spoonful of batter, then sprinkle with a spoonful of cinnamon sugar. Alternate layers, ending with cinnamon sugar.
Microwave on high for 1 to 1 1/2 minutes, or until cake is done to your liking. Allow to cool for a couple of minutes before serving.
1 tbsp very soft butter
2 tbsp sugar
2 tbsp applesauce
vanilla extract, few drops
¼ cup plain flour
⅛ tsp baking powder
pinch of salt
1 tbsp very soft butter

1 tbsp brown sugar
¼ tsp cinnamon
In a mug mix the 2tbsp sugar and 1 tbsp butter until well incorporated. Stir in applesauce, a couple of drops of vanilla extract, flour, baking powder, and pinch of salt; stirring until just combined. Use the back of your spoon to smooth it out in the bottom of the mug.
In a separate, small bowl, combine 1 tbsp of butter, 2 tbsp of flour, 1 tbsp of brown sugar, and ¼ tsp cinnamon. Use your fingers to to pinch the butter and mix it in with the other ingredients. When it starts to look like lumpy sand and all ingredients are combined, pour on top of cake batter in mug.
Cook in the microwave for 50-80 seconds depending on your microwave (cook for 50 secs then keep adding 10secs until done
