Rhubarb cordial

Gorgeous rhubarb is coming into season and what better way to use it than to make your own refreshing cordial. This was made with my first pickings of my home-grown rhubarb which is ridiculously easy to grow.

Rhubarb Cordial – Ingredients

750g Rhubarb, chopped

375g Sugar

Peel of an orange – use a carrot peeler to peel a few large strips

500 ml water

Method

  1. Cut the rhubarb into 1 inch pieces, the pinker the rhubarb the better!
  2. Place all the ingredients in a pan and bring to the boil, turn down the heat and simmer for about an hour. Leave the mixture to cool in the pan.
  3. Strain unforced overnight through a coffee filter or muslin cloth lined sieve over a large bowl.
  4. Decant into a bottle or sealed container. This will keep in the fridge for about a month.
  5. Serve with sparkling water for a delicious refreshing soft drink or for a grown-up twist add to gin and tonic or serve with prosecco.
