There is nothing better than eating tasty British strawberries whether home grown, picked yourself or bought, they are a tasty treat. Following difficult weather conditions earlier in the year the British Strawberry season is underway later than usual. Slower ripening means bigger, sweeter and juicer strawberries than previous years. This is great news for all us health conscious strawberry lovers. Strawberries are excellent sources of vitamin C and K, low in calories, fat free and provide a good dose of fibre, folic acid, magnesium and potassium.

Strawberries and Cream Fool
175g Fresh Strawberries
225g Double Cream
4tbsp Icing Sugar
Method
Place the hulled and chopped strawberries in a bowl with 2tbsp of the icing sugar and gently pulse to a purée. You can sieve this if you prefer no seeds.
Whip the cream with the rest of the sugar until firm but be careful not to be over whip, it should form soft peaks.
Gently whisk in the purée until combined.
Pour into small ramekins and refrigerate for 2-4 hours until set.
Enjoy straight from the fridge, this is lovely served with some fresh strawberries and a nut brittle to add a bit of crunch.
This divides into 6 to 8 small portions.
